Stainless Steel, Non-Disposable Steam Table Pans - How do you use them?

Been seeing a lot of YouTubers using 1/6 size steam table pans for their waste collector while prepping veggies and what not.  I picked up a couple of 4" deep 1/6 pans at Restaurant Depot the other, for this purpose as well as holding things like onions & garlic in the garage fridge for use later in a recipe.
I know a couple of y'all keep your sauce warm in one on the Egg, and I think I saw someone braising some brats in beer on the grill in a longer one (1/3 perhaps?) before charring them up over the flame.

So, how ELSE do you use these thing?
AND, should I get some different dimensions for some other cool applications?

I use them all the time, full size for prepping protein, load the bottom with rub and do my coating in there, 1/3 hotel pan I use for water in my offset, also great for putting fat in during your cook to get smoket lard/tallow --use them for sausage making as well, uses are endless

I have a couple of the larger ones which are 12 x 24 x 3. Using plastic bear claws I pull my pork butts in one. That confines the mess and makes clean up easy!

Yeah, I've used the throw-away aluminum fulls & halves for proteins and such, but never had the smaller, stainless ones.  I think I'm gonna like them, despite the hollerin' from SWBO about more 'stuff'... I suppose I'm looking for more justifications, huh?

I use the smaller ones in my Pelican cooler to keep foods I don't want to get wet in ice bath above the ice. Never that about using in the grill, but I have a ton of disposable pans.

I have a couple and as a couple have mentioned used for icing condiments and pulling pork.
Also have one that you can remove 1 cooking grate on the Hastybake and make chili, pepper stout beef, beef bourguignon, brats, etc.

I use the 12x12x6-8” deep ones at work to weigh off ingredients. They’ll hold about 19 pounds of dry ingredients depending on density

I engrave the weight on them, no worries with forgetting to tare the scale.

Did you engrave before or after you weighed? I wouldn't want a recipe to get messed up

Honestly, that was a good idea.

That was the first thing that came into my head.

This was kinda like "I got an extra nut and bolt with my last grill? Can I use it with anything else?".
