Sorry I never got back to everyone on this one. I ended up reverse searing. I was very happy with how it turned out short of two mistakes on my part. Slight overcook on the sear led to my “second smoke ring” appearance. I also had a few too many beverages that day that led to me forgetting to change my slice approach when the grain switched.
Oh well! Live and learn, and it still turned out mighty tasty!Brandon - Ohio
