Fettuccine Carbonara

Wifey had some time today (despite juggling our two kids!) so made some fresh fettuccine for dinner. Then made a carbonara sauce. Only thing missing was the fresh parsley, as we didn’t have any.

    One of the best ways to eat pasta and homemade noodles takes it away- not a bad way to come home from work.

    Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

    I can almost taste it... LOVE carbonara. And homemade pasta. Both together is a very fine meal.

    Thanks. Surprisingly easy to make. If using store bought pasta rather than homemade, it’s a breeze.

    Carbonara with homemade pasta is next level stuff. I’d be all over a plate of that.

    My Beautiful wife and I traveled Italy, from Rome to Venice, and when we dined, this meal was the most frequent choice, almost exclusive for us both, for two weeks. We have made this 100 times since coming back home, and can’t get enough.

    We (when I say we I mean My Beautiful Wife) recently foraged for some Morelsand added them to the mix as well. 

    The one thing I will add is the importance of adding the water from the boiling of the noodles back in to the solution. 

    Your meal looks heavenly, and thank you so much for sharing. Beautiful presentation as always.

    Funnily enough, I don’t recall having dined on Carbonara in Rome. But who knows.... that was years ago and pizza and pasta were of course a staple. A nice primi before launching into the secondi. We will go back. 

    Bet Morels would pair beautifully. And don’t forget a good wine, of course. 

    It’s funny that you mention the essential addition of the starchy pasta water. I cooked the pasta and almost forgot this step. Good thing wifey was on the ball and swooped in to bring it home.

    Thank you for the kind words. I have been dealing with some health issues, primarily, a series of back surgeries that started about a year ago, perhaps a bit longer, and I just had my last 2 weeks ago. I was told with therapy, I could possibly get back to about 80%, and if so I will take it.

    I hope to be posting regularly again, but first, I need to get the XL gaskets changed out, it has been 5-6 years or so, I think, and they have just give out.

    I will be posting a Birthday cook coming up for My Beautiful Wife next week hope to be providing something that does not suck.
