Hong Shao Rou (braised pork... ribs)

Found myself in possession of a rack of ribs, and wanted to try something different.  

Came across a recipe for braised pork belly, and figured it would work. 

Ginger, green onions, and the ribs in the pot for the initial BOIL(!!!).


Skimmed the scum off, and proceeded to get some char on the meat. Rubbed with sesame oil and DP Peking. 



Back in the pot with more ginger + scallions, and some spices. 



Back to the egg to simmer for a couple of hours. 



Added fermented black beans later, and some cornstarch to thicken.  Hastily plated pic, ‘coz the natives were getting restless. 


 
Turned out well. The pork was tender, and **** tasty :) This is supposed to be done with pork belly, which could only make it mo’ bettah.

    I think I've eaten that before! Looks delicious!!

    That's the sauce consistency I was aiming for, but seems like I didn't add quite enough cornstarch. Next time :)

    I think you'll enjoy this. The onions kinda melt into the sauce, and the ginger really brightens up the flavor. 

    I would have liked the sauce to be thicker, since it was served with rice, but you may prefer otherwise.

    looks bomb. how do you like the momofuku flavored salts? I remember like a decade ago I bought some flavored salts and it was just a thing that ended up sitting on spice shelf forever with no use. I feel like if I were to get it again the same thing wouldn't invariably happen once the novelty wears off.

     I hear ya. i've done the same. Have a collection of seasoned/flavored salts (usually gifts) somewhere. 

    These are pretty good. I got the Spicy, Tingly, and Savory salts, and prefer them in that order. The Spicy one goes on most things I eat :) The Tingly has some sichuan peppercorn in it, so it gets used a fair bit, too. Have used the Savory somewhat less. Its still good, though. 

    But, the momofoku chili crunch is REALLY good. I highly recommend it.
