Found myself in possession of a rack of ribs, and wanted to try something different.

Came across a recipe for braised pork belly, and figured it would work.
Ginger, green onions, and the ribs in the pot for the initial BOIL(!!!).

Skimmed the scum off, and proceeded to get some char on the meat. Rubbed with sesame oil and DP Peking.

Back in the pot with more ginger + scallions, and some spices.

Back to the egg to simmer for a couple of hours.

Added fermented black beans later, and some cornstarch to thicken. Hastily plated pic, ‘coz the natives were getting restless.

Turned out well. The pork was tender, and **** tasty
This is supposed to be done with pork belly, which could only make it mo’ bettah.

These are pretty good. I got the Spicy, Tingly, and Savory salts, and prefer them in that order. The Spicy one goes on most things I eatThe Tingly has some sichuan peppercorn in it, so it gets used a fair bit, too. Have used the Savory somewhat less. Its still good, though.
