What’s On Your Super Bowl Menu?

My son is coming down from Boston for the game, and some of the Treehouse I have in the walk-in. For proteins he only eats chicken and seafood. So far I am thinking Green Lightning Shrimp tacos, but could use some ideas to round out the menu.

Whaddaya got?

    Im going pork (sorry not helpful for your son) but I am making greek gyros using the joetisserie . . loosely following this video - still searching for good tzatziki recipe tho  :s

    I know it's lame but wings with various rubs work.  A buffalo chix dip or using the dip to stuff Frito shells can also meet the criteria.  I actually have wings on the menu but also ABT's and dill pickle slices with a filling on them then wrapped with bacon.  So the bacon is a non-starter.  
    Can't miss with anything shrimp although my favorite shrimp recipe has a bacon wrap.  Guess I'm not much help here.
    Glad you are posting and presume you are getting on with the PT.

  • We're probably freezer diving and having either pulled pork or brisket nachos/tacos made with vac sealed meat from previous cooks.  

    If it's just cold, and not blowing snow, I'll put some wings on the Egg with a few chunks of cherry, Honey Hog Hot, and a couple different sauces.    

    Wings are pending I get to Costco before Sunday.  If not, we'll probably have the nachos, pizza, and maybe Dunkaroo Dip with animal crackers?  Maybe throw a fruit or vegetable in somewhere, too.

    I love tzatziki sauce.  Some good guidelines here

    tips: 
    *get a good Greek yogurt.
    *use English cucumber.  Get as much moisture out as possible.
    *make a day in advance, the garlic will mellow out
    *use a good quality olive oil
    *fresh dill in right before serving.
    *don't hate me, but adding some MSG really elevates it

    You can salt the chopped cucumber and let it sit in a towel in the fridge overnight to get water out and that can be the majority source of your salt.

    Amazing thanks!  My wife & I love tzatziki also - but impossible to buy good stuff from a store. My sister is a food scientist and she is fan of msg - says it’s safe, just got a bad rep for awhile.  Reminds me of the “nitrite free” marketing BS.  Anyway thanks for tips !!

    Have you tried the Boars Head Tzatzike? If you are lazy (like me)  or don’t have time, give it a shot. I like making it but BH in a pinch is a nice purchase.

    Most likely just SWMBO and I, so unlike last year's protein throw-down, we are just gonna do some "Mathieu" MOINKS, some "Tyreek Just Smoked You" Queso Dip, and then prolly airfry about a half bag of boneless wings that we got for the AFC Playoff game for a friend who doesn't like bone-in wings, but then she flaked on that game and can't make it to this one, and now we are stuck with a bag of boneless wings...

    Chili...Inside, not on the egg. Wind chill will be -20's here on Sunday and my happy asz will be inside.

    Secret ingredients will be fish sauce and chorizo...Guess that's no longer a secret

    I am making chili on Saturday because I like it better the next day.  And a pile of wings on Sunday for the game.  

    It is supposed to be a high of 5°F here on Sunday, so the wings better cook fast!  I don't want to be standing out there for long.

    I have some OTT Chili parts left over from a Xmas batch* that I will be incorporating into a new batch.

    *SWMBO picked up the "hot Version" of Rotel and Tomatoes vs Fire Roasted Tomatoes and D^&B A*S me missed it when I dumped it in.  After it was made I thought oh that has some heat... then I read the cans.  Had to make a last minute save to serve it to people with a tamer pallet so I saved all the Vegetables and Vac Sealed and will use them in this batch- adding the following plus still smoking the meatball on the egg
    1 14 oz can Tomato Sauce
    2 7 oz cans Fire Roasted Diced Tomatoes
    2 Cups Beef Stock
    2 cans Green Enchilada Sauce
    2 cans mild Rotel with roasted garlic

    Wish me luck

    That Rotel with habeneros is awesome.  Love that stuff.

  • Wings.  5 lb Tyson bag got liberated from the deep freeze yesterday morning. 

    Game plan is to season today [1/2 rub + 1/4 Dave Chang spicy salt mix + 1/4 baking powder] and sit them in the fridge til I egg them up on Sunday.  Cook as many as possible on 2 raised grids (indirect at 400 for 30-45 mins), glaze in Franks + butter, set the glaze/re-crisp and serve with more sauce. 

    If the weather cooperates, we'll have some couples from our pod over to watch TB-12 sicken me, with the game projected above the mantle of an outdoor fireplace we built during COVID-19, Part I.  If the weather blows us up, we'll deliver wings to our pod-mates and watch alone, in disgust, as Brady pulls off another SB win against any team this isn't the HoF-bound-Eli Manning-led, New York Football Giants. 

    Somewhat relatedly, today is Day 33 of what has become an extended DryUary.  "HendersonTRK No Alcohol Thru the End of the Super Bowl" is a 9.5 point underdog and was seeing some action among early bettors.  But the sharps and the GameStop Bros started taking the money line on both this bet and the Bucs, so wager accordingly.    
    It's a 302 thing . . .

    Harissa wings with honey mint basil dip, garlic soy wings, and some kind of hot chicken dip. Still working on the recipe for the last one.
