Thanks, Frank. There is little in the world my wife loves more than a good sandwich, so I will share this with her and see if we can’t put something tasty together.(Edit: I feel as though stomach expansion is also in my future.)

Tonight’s endeavour - pulled pork, pickled red cabbage and jalapeños, pineapple glaze, Gouda, mayo on an inside-toasted Portuguese sweet bun. Of all of the pork butts I’ve done, this was my favourite by far.
