    You can pack heavy, since The Murder Van will hold tons of stuff. And you have an ARB. 

    Breakfast is usually eggs, sausage, bacon type of stuff. I try to bake a big sourdough loaf to take with us. 

    Lunch is usually a wrap/sandwich of some sort. 

    Our own tradition is to make a Thai-style shrimp curry on the first night. Something like DP Tsunami Spin, some other spices, onion, ginger, garlic, and coconut milk. Served with rice. Very easy, filling, and we really enjoy it that first night. 

    I've made some kind of Cuban-style arroz con pollo a couple of times, and it was a big hit. One pot dinner. I cheat by starting with this, then building on it:

    Season a few chix 1/4’s with some of this. Marinate for a few hours. 

    Dump in a pot,  and sear the chix for a bit. 

    Add butter, onions, ginger, garlic, cumin, or whatever you like. 

    Add parboiled rice, and sauté the rice in the drippings for a few minutes. 

    Add double the volume of water:rice. 

    Bring to a boil, then turn the heat down to med-lowish. Should be done in about 10 mins or so.

  • We like to make Shakshuka in the mornings for breakfast.  You just need a cast-iron pan over the fire to make it.  The ingredients are easy enough to cart into the woods, except for the eggs which do require some extra care.  But it's a hearty dish that works well on a morning after a long day of hiking and sleeping in a tent.

    @caliking both dishes sound crazy good. @JohnInCarolina shakshuka I need to make that. The boy request we have Frito chili pies. I put hot sauce, green onions and sour cream in mine. He likes a little mustard in his. For breakfast we're having oatmeal, cereal, blueberry muffins. For lunch grill cheese sandwiches with tomato basil soup. We also have sandwich stuff for snacks. Including chicken salad with cranberries. Supper is beef stroganoff with garlic bread. @Foghorn I love me some cobbler. And apple is my wife's favorite.

    Been a while, but unless going fishing so the challenge was to catch or go hungry then I always planned and prepped tasty but easy to grill meals. The idea of taking X number of ingredients to make something after I got there made no sense!

    This might not be a option for you, but my absolute favorite thing to cook when camping on the river is the fish we catch. Red bellies, bluegills, goggle-eyes and catfish deep fried or pan fried in Lodge cast iron. It just doesn’t get any better than that my friend.  
    Nothing better than fresh caught fish deep fried the same day!
