@MasterC -anything with habanero in the mix is a definite winner. Looks great.

All done. 6 hours at 180 in pellet pooper, IT around 137 (@lousubcap was spot on).
@Botch, see top left, Tefloned foil came off with zero resistance, no skin tears.

Leftovers tonight. Cooked the ham bone from yesterday with some dry split peas and at the end of the cook added the leftover farro and asparagus primavera and Moroccan carrot salad (that I needed to chop a bit). Topped with olive oil and sour cream.

@Dyal_SC I lump split peas in with beans if that gives you any comfort… also I had to work today so I needed a quicker cooking legume.

Well @lousubcap I turned in my retirement papers today!!! Get emotionally ready for me with free time or buy a house nearby to enjoy a few meals and/or leftovers.

Congratulations @BeanHead. A game changer but all in your approach. For me and I will offer to anyone, "You know when it's when". Have been living the "Every day is Saturday" life style since the close of 2015 (old here), the one material thing you need is a watch with the date and day of the week to keep you grounded.
The most important part of this major life changing event is the way ahead. I volunteer two days a week at two different organizations and have been since walking out the door. You will sort that out.
Your cooking prowess may give you something to further pursue.

Thank you! I am already lined up to volunteer at a couple places and have probably too many ideas for how I want to spend my time. I am bailing early, but it feels like the right time to let a younger scientist take my place.

It's been helpful for me to have a serious long term hobby. But after finally retiring, I picked up two pro-bono jobs. I left one of them after a year and a half and the other after around four years, and while I do miss the second, I don't miss the first. The time lets me stay fit and play more. I paint and do some 3D fiber art in addition to cooking, wine/mead making, fishing (salt and fresh), golf, and pickleball (try not to giggle). Been playing with tanning hides for a couple years, but want to really get into taxidermy. One of the volunteer jobs is helping to process specimens for a museum, hopefully it will give me a good place to practice handling the animals with a lot of supervision.

Thanks @lousubcap Pretty exciting to think of all the things I can still learn and do! @Botch sorry that happened to you. I’m trying to ignore looking at the news and my retirement accounts with the plunge in the markets. If what I have saved and done isn’t enough I guess I will start a BGE cleaning business. I love taking the things apart, so gratifying.

No chance to present with the quality and skills posted above but being lazy, a shout out to caveman steak.
You will not get a uniform end-to-end outcome. (The char is my kryptonite that you don't get with any other technique. BTW- I am a solid 5 on the toast scale-that would be second lowest from the right).
