This Forum Got In My Pocket Again

I have worked on my smoking skills for years, after all I have 3 green eggs.  Always searching for the next best thing I have seen numerous discussions about the KBQ aka “the dishwasher”on here.  I resisted buying one for 2 reasons, babysitting a stick burner and the unique sized split log chunks required to fire it.  Low and behold one appeared locally on FB and landed at my house in less than 24 hrs.  I blamed you guys and gals to SWMBO, she isn’t accepting that answer.

    I like the bump stop handles on the door but does it let you lay the door all the way down to remove or slide around the bottom racks?

    Welcome to the club. Although I haven’t even picked mine up yet.  I got it used and will pick it up this weekend. Then give it to SWMBO to save for Christmas.

    I was curious and found the answer. It looks like the bottom rack is still usable with the handles and can accommodate up to 1" full size restaurant pan on the 2nd to last rack. The 2.5" pan I have would have to be placed on the third lowest rack. 

    Since your smoker has the handles I'd imagine it also has the removable door option. Which would really come in handy....

    so shiny. I have never seen that door kit before. I can see how it would come in handy. My latch is bent to hell from dropping the hot door a few times. It straightens out with a pair of pliers but one day it won't.

    Congrats BTW- really fun cooker to have in the arsenal.

    I am really impressed with the KBQ.  Really easy to control and a totally different taste for food.


    One thing to watch during your cooks are the dampers.  The top one takes in the "dirty" smoke, which I try to keep mostly closed.  When you add wood or stir the coals, you can accidentally push the wood/coals into the damper which opens it up.

  • @QDude I ran this experimental cook with both poppets open and the ribs came out with a mild smoke. I used pecan and cherry splits and pieces that were very dry. I am going to buy a moisture meter and experiment with different woods and moisture levels.  I got some oak for coaling properties.  Will pick up some hickory to give that a try.  I avoid hickory in the egg since it is easy to over smoke and make food bitter.  I think it would be very difficult to over smoke with the KBQ.

    Actually you can oversmoke to some degree.  When I first got the KBQ, I set up the dampers wrong and only pulled in the dirty smoke - was pretty strong.  Fortunately, I figured out my mistake on the next cook and the food was much better.

    Let me know if the moisture meter helps.

    I have a moisture meter but i have found you can really feel the difference in wood by the weight. Heavier = more moisture, lighter = less.
