@canugghead - this got me thinking... I have a couple of steaks dry aging in the fridge. Was planning on letting one swim, then searing in a skillet. But I might try broiling in the toaster oven after SV, now.

I do not always try crazy things, but when I do, I use carefully prepared and dry-aged steaks lovingly looked after for weeks.caliking said:@canugghead - this got me thinking... @caliking Stop! After 250 low n slow in toaster oven, it was seared on CI grid sitting directly on lump. I wouldn’t broil in toaster oven, you’d probably get a brown band by the time crust is built?canuckland

Careful planning be damned. These are 2 non-1/2” wagyu NY strips that were drying in the fridge for 3 days, because I didn’t have freezer space after hitting a wagyu mother lode at H-E-B.Ozzie_Isaac said:
