Birria tacos. This is been on my cooking list for awhile. Making this had the house smelling so good! The homemade spiced chili oil is what puts it over the top. Got a few ideas to even make it better next time.

Scott, I’ve got to tell you man. I’ve been watching these trend on the internet for a little bit and your post finally pushed me over the edge for wanting to make them.
i ran out of time to make the full Birria, so here’s my poor-mans version
browned some SRF ground with onions and one of those packets of that taco seasoning.Since I didnt have the broth of the Birria stew, I took a can of Campbell’s beef consume and added a puree of guajilla chiles, cumin, coriander, onion powder, garlic, chipotle and Adobo sauce. Then, to replicate the fat from the stew, I added the drained fat from the ground beef to the pot.Added some Oaxaca cheese, then ladled the enriched Chile-consume over the inside and outside of the tacos and fried until crispy.Pretty darn good. Makes me want to give the not half-butt version a go. looking forward to trying out the version you posted.XL & MM BGE, 36" Blackstone - Newport News, VA -
