4th weekend menu

So what is on the menu for everyone this weekend?

For me it is Brats for lunch today simmered in beer and onions. 
Tomorrow is a 5lb beef rib chunk and the classic hamburgers and hotdogs. 
Sunday is TBD but thinking a rack or two of ribs. 

Hope everyone has a great holiday in these weird times!

    Family wants bacon cheeseburgers and s’mores on the fourth. Doing pulled pork on the 5th.

    Tomorrow- 3 racks of baby backs and one St Louis cut for the small staffed local firehouse.  Also will do a 4 LB prime rib roast (been in the meat locker freezer for too long) for SWMBO and me (empty nesters) to thin slice for some tasty sandwiches,  Bones already removed and will ride along for beef rib treats for me.  
    Debating hot dogs for munchies just because.   
    Pretty low-key given the covid cloud over everything- 'cept the bourbon and beer consumption.   B)
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Sadly, due to Covid our tradition of an extended family 4th celebration has been downsized to our immediate household.  We will have multiple toasts to our great Nation, share in reading the Declaration of Independence and begin our official countdown to the November 3rd election. Dinner will still involve the BGE tho, Grilled rack of lamb, grilled asparagus, Panzanella salad,  heritage strawberry shortcake with homemade vanilla ice cream.

    Smashburgers for the 3rd.
    A favorite flank steak for the 4th.
    Baby back ribs for the 5th.
    Dental work on the 6th, so probably slurping clear soup!

    Smoke a Prime Brisket overnight for the 4th
    Leftovers on the 5th
    Picked up a watermelon from an old guy who has been selling out of the back of his truck for over thirty years.  Lots of peaches and berries too.

    Pork tenderloin for lunch tomorrow. Then the plan is for a peach-glazed butt to hit the Egg early Sunday morning. If I had planned ahead I would use @YukonRon’s recipe for a brine but not sure I have time to pull it off now. Missing some ingredients.
