Next door neighbor eggs, home cured bacon from one of our pigs, homemade hash browns, homemade roasted tomatillo salsa, homemade tortillas, store bought cheddar (still working on that), breakfast beer. Delicious.

Beer and store-bought chocolate chip cookies can get me going in no time
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

You are soooo right. I moved to WI for 7 years and the only breakfast “taco” in sight was Mickey D’s. I’ve been making BT’s since I was in high school so I’ve dialed it in pretty well. I got really good at it up there. It’s also where I learned to cook bbq too. Salsa-Roasted Tomatillo Habanero Salsa:2lbs tomatillos
2 cloves garlic1.5 habanero peppersJuice of 1-1.5 lime (to your liking)Big pinch 50/50 salt and pepperTsp cuminIn this batch I used jalapeno Because I had them. If you use jalapeno roast 3-5 of them (depending on how hot you like it) with everything else.Directions:
Husk Tomatillos and remove stems from tomatillos and peppers.Place tomatillos, garlic and peppers on a foil lined sheet pan under broiler on high. After 5 min or so (when getting very blistered and dark, turn peppers and tomatillos to blister the other side. If garlic has started to soften, remove at this time.Once peppers and tomatillos have blistered and softened, put all ingredients in blender (make sure you get any liquid that has run out onto the foil

Really like that! I'll have to give the salsa a try. The fire roasted salsa is excellent. The habanero salsa thread burned me up too much, but the flavor was most excellent.On a side note, the next time I actually get a brisket that I don't scorch, I'll try a RDH mock up.=======================================

I use this recipe when I make them. H-E-B has amazing homemade tortillas so I use those 90% of the time. These are right in there though. Very good. I would gladly send you a couple of packs of the H-E-B tortillas when I can find them. They freeze well and you can just throw them in a skillet to puff them up. They are uncooked disks of dough that you cook up in a skillet. They are right in there too as far as really good tortillas go. It’s honestly not worth making them when I can get these or still hot tortillas from H-E-B bakery any time I want. It’s fun to do sometimes though.Either one of these will up your tortilla game immensely over regular store bought tortillas.

Give HEB on-line a look. I buy from them whenever I can especially given what the company returns to the community. I know the high heater 24 habanero and roasted garlic salsa thread is not getting any posts right now but I can verify that the salsa is quite active. I believe it has yet undocumented medicinal and healing powers. But can also mess with your toilet paper consumption rate.The Cen-Tex Smoker said:
