Hand Rolled Pasta

I decided to play and see if I could get the hang of rolling pasta dough by hand. I got this big honkin’ rolling pin for Christmas and I’m just now using it. 
So I made the dough from 1 fresh egg and about 100 g of AP flour (egg was pretty big). 



Let the dough rest while I grilled some sourdough for an appetizer. Finished with aged balsamic, fleur de sel, and chives. 


I had some frozen meatballs I had smoked on the egg some time ago. Canned tomatoes and fresh herbs for sauce. I cooked it down a bit to thicken it. 
Plated the pasta with parmesan and cured egg yolk for garnish. 


Not suffering too badly. Apple crisp is baking on the mini max. Stay tuned...

    Thanks y’all. I just pulled the crisp off the mini max. 


    We’ll have some ice cream when it cools a bit. Not homemade ice cream - but Blue Bell so that’s still a win.

    Yup- when we are down just keep kickin'.  That said, that is food porn at the highest level.  Great cook and magazine quality pics right there.  Congrats.

    @lousubcap Thanks for the kind words. The crazy thing is that I’m just trying to learn to cook the way “grandma” did. Homemade bread, hand rolled pasta - simple foods like folks made “back in the day”.
