Iranian lamb meatballs (koufteh ghelgeli)

Options
Felt like cooking something new, so settled on this from Saveur. Didn’t have to egged, but why pass on a chance to light up some charcoal?

Mise en place. Ground lamb, turmeric, salt, spices (cumin, coriander, dash of nutmeg), lemon juice, onion juice, chopped onions, carrots, ‘taters, mustard oil. 


Meatballs - lamb, grated and squeezed onion, turmeric, cumin, salt. And a quarter cup of chickpea flour to hold it all together. 


Simmered until the veg was done.
We’ll give it a day or two to let the flavors get friendly. Sample taste was promising :)

    I had the same response when I read the recipe the first time! Iranian food tends to be low on heat, so I figured that was intentional. The Indian kofta curry that I make has more heat and other stuff. 

    I liked the taste of this though. Looking forward to digging into it.

    Not usually. Pakistani kofta curry is usually meatballs in sauce, but Indian kofta curry can be meatballs (usually ground goat),  or vegetarian (cabbage, potato, paneer, spinach or some combination). They're all pretty darn tasty though!

    This holds true for my recipes =) . I was pained by the lack of garlic in this recipe, but was trying to stick to the original recipe to see how it turned out. Its for sure gonna have the "appropriate" amount of garlic next time.
