Scratch Lasagna

I purchased a used Kitchenaid mixer a few years ago on Craigslist. The main reason for purchasing the mixer was that it came with a couple pasta attachments. I kept the attachments but flipped the actual mixer as I had one already. So the attachments essentially became free when flipping the mixer. I guess that didn't give me much motivation to go and use them. They've just sat on the shelf for the past couple years. I figured I'd better at least try them out and see how they work. So I did a practice session making dough and figuring out how to use the attachments last Friday. I was planning to make lasagna for my mom's birthday on that Sunday.

I made the sauce on the egg Saturday. That took about 7 hours to reduce down and thicken up.

Sunday was rolling dough.

My mom insisted that she still needed to bring something even though it was her birthday dinner. So she made a olive/jalapeño french bread.

That was a lot of work for some lasagna. I definitely got some learning experiences out of it and what I should or shouldn't do the next time making it. My mom seemed to enjoy the meal. That's what counts.

That’s a beautiful lasagna. I know home made pasta is a bit more work, but I think the results are worth it. Well done.Coleman, Texas

I really enjoyed reading this post and checking out the pictures. Glad to hear your mom enjoyed the fruits of all of your hard work.
I remember the first time I made my own pasta - spaghetti and cheese stuffed smoked meatballs. I almost called it quits during the pasta rolling process, when I got a call for some work nonsense, only to return to the kitchen to find that my furry beast had yanked the freshly rolled dough from the table and encased himself like a feline cannoli. I had to start over and it was so much work but worth it.It's "Smokin Gal", not "Smoking Al".

I hear you about wanting to quit. It was pushing midnight Saturday night when I messed up the dough ball. I was positive I was going to be short on ingredients for making a new one. I was using some not so nice language at this point. I somehow managed just enough ingredients to make a second ball. I started looking for my keys for that midnight grocery run before I measured everything out though. I went out at 6:30 Sunday morning and bought ingredients for another dough ball if something didn't work out with the first one. The whole weekend ended up being dedicated to a couple pans of lasagna. Seems pretty strange when you think about it.
