Where to buy Wagyu brisket???

Tried and true suggestions? We bought one from farmhouse delivery in Austin last year for Memorial Day and they no longer offer it. Most fantastic brisket we ever made! Looking online and see several options but for that price don’t want to risk it. Need a small 9 pounder.

    Do not buy a 100% wagyu brisket. They are so fatty that they never render right. Also, there is so much fat that the beefy flavor you are looking for in brisket is very muted. I love wagyu but not for brisket. 

    If you are in bee cave and looking for good wagyu beef- Ranger Cattle is at the Lone Star Farmers Market every week. Also, best wagyu beef I have ever had is from Prime Line Beef. He lives in Lakeway and delivers to my house. He has some 50/50 Charolais/Wagyu briskets that are out of this world. Let me know if you need his contact info. Great guy. 

    Im teaching a brisket class at Faradays in June.  I talk a lot about great local sources for meat and the differences in all the different grades/breeds etc. Look for it on the calendar (they sell out very fast as he only has 16 seats).  Would love to meet you and share all my shady parking lot meat purveyors.

  • And JIC is right. Snake River Farms makes the best commercial wagyu briskets I have found. They are 50/50 wagyu/black angus. Just the right amount of marbling and beefy flavor.

    @Eggpharmer I don't know how it will taste but at that price you scored big time.  Congrats on the find and enjoy the cook and follow-on eats. 
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I have not but I have a few thoughts. 

    1- Snake river farms is based based in Washington state (this says it’s from Seattle).

    2- It also says “American Wagyu” which is almost always blended with angus or another American style breed (think beefy flavor)

    3rd- SRF has recently teamed up with a national food distributor that services the club channel (Costco) and grocery channel. 

    My guess is this is an SRF rebranded for grocery. I would buy one in a second at that price. Im going to my H-E-B now to see if they have any.

    Good lord. Just saw the cooking instructions. They have that label on all their briskets but I forgot. Hilarious.

    No joy at Lakeway store today. Pretty lean selection. A couple of CAB, one Meyer All Natural Prime, and several commodity IBP choice. The Meyer looked good but I’m holding out for the good stuff.

    Fyi- they are full blood wagyu bulls crossed with “American Cows” whatever that means. I would have picked one up today for sure if they had one.

    Just ordered 2 from my wagyu guy. One for me, one for class. 50/50 Wagyu-Charolais

    They had them last 4th of July. Snake river farms, too. I bought 8 of them. They have had a different brand in some clubs since but I didn’t see them here. I expect they will have them again some time this summer. Load up if they do.

    As others have already mentioned above, SRF is phenomenal. In my opinion their Gold Grade Line is the pinnacle of beef. Another one that is simply outstanding is KOW Cattle Company. Folks have asked me which one is best. To me it’s like comparing the pre 2011 Muhle R41 to the post 2011 Muhle R41. It’s simply a personal choice and preference. They are both phenomenal. And yes I’m talking about the meat purveyors as well as the two razors.

    I an confirm that Costco in Austin had in January of this year.  I dry aged mine for ~70 days.  Came out fantastic, no question.  Have not seen them since.

    Stopped by H-E-B Pearland today and found this...


    Picked some up as we will be having some peeps over this weekend, and burgers are on the menu. 

    Wandered over to the brisket holding pen...


    That first brisket tag is for the wagyu briskets, so they must have had them but ran out. That first packer in the top left corner is a “100% grass fed” prime brisky , and was  tempting. Never seen those before in my H-E-B. I was in catch-and-release mode, so I put it back. 

    But it seems  things are looking up here :)

    I’m pretty stoked about the ground beef. Crowd I’m serving to won’t care or know, so it’s mainly for me. Had a wagyu burger at Killen’s burger joint last week, and it was not bad.

    Feedback= don't buy the ground beef.

    Did some burgers this pat weekend. Tried to cook one well done for a friend's kid, and I couldn't. Even walked away from the griddle and ignored it, but it still turned out medium-ish. Kid loved it, but parents sweated bullets :smiley:

    The beef was spongy. As if it had been frozen and thawed a few cycles. I bought and didn't freeze them, so it wasn't on me. These didn't beat the 80/20 pre-made burger patties I buy from Kroger (yes, I know that's sad). So can't say I would buy again.

    I have 1.3 lbs left, which I will make keema saag out of, and I expect it to be passable (beef keema is not my fav). I imagine that getting one of the wagyu briskets and grinding for burgers would be far better, given the price point. 

    Lesson learned. Which i'm fine with.

    I picked up my steaks from Texas Star Grills in Houston last week and happened across Lone Star - then passed a few of their trucks on the ride back. Them or Heartland will have what you are looking for
