If you have time and the ability to travel, head to Bourges. It is the former capital of France and features the biggest church in the country. When we were there, we were the only visitors to the church at the time.
Also, the castles in La Loire region are outstanding.
Versailles is also fun, but is overrun with tourists.

My Beautiful Wife and I go there every other year or so. Love the images. I know your agenda is full, so I will not bother making suggestions on places to visit or places to eat.
My only suggestion is to enjoy your trip.
We love France, did the climbing and backpacking, the wineries and the cities.
Always make a list of the places you enjoyed and the places you missed. Prioritize and get them the next trip.
Enjoy this experience. There is just so much ro do.
Word of warning; Be extremely careful of the area around the Moulon Rouge. Bad hombres hang out there, pickpockets galore. I have stories.

Did you enjoy the Orangerie @dmchicago? The Water Lillies are beautiful paintings. If you like impressionist art, the Musee d'Orsay is a must visit, lots to see there.
