My boss asked me on Sunday what I’m cooking for the crew of 28 on Tuesday. My initial response was “what are you talking about!?” But then I said I got this. I decided to make pork belly burnt ends, wings and 2 Eye Round roasts. I had to leave the XL at home (can’t move that thing!) and use the Medium and my Smoke Vault. Long story short, there were no leftovers and everyone went home stuffed. Not a bad Christmas party!











I'm in Fredericksburg, VA, and I have an XL and a medium.

nice my boss asked me to today to cook for his family that is coming in this weekend, so i will be doing 20lbs of bacon for myself, a brisket for myself and him, 2 pork buts for him and a turkey on sunday/monday. lots of lump at our house this weekend.

By any chance, is your employer hiring? Not sure what you do but I am willing to learn. Awesome cook!

Now that is the way to adapt and get outstanding results. Great cook especially under the circumstances. Perhaps you should suggest that if you are on the program for 2019 that he get something called vision and give you fair warning, although that cook would be tough to top.
