Dressing/stuffing recipe needed

Haven’t had good stuffing in the last few years. Need a killer recipe! 
XL, Small, Mini & Mini Max Green Egg, Shirley Fab Trailer, 6 gal and 2.5 gal Cajun Fryers, BlueStar 60" Range, 48" Lonestar Grillz Santa Maria, Alto Shaam 1200s, Gozney Dome, Gateway 55g Drum

    Here's my mamaws recipe.. been passed down a few generations.. Old school southern cornbread dressing...  I made this video last year to make it easier to follow.  https://spark.adobe.com/video/TIaQHKt6vgZJF 

    Mix it the night before, put in the refrigerator overnight, and bake it Thanksgiving morning

     

    Make 6 Pans of Cornbread (Martha White – White ) 1 egg and 2/3 cups milk per pan, I baked 3 pans at once.  

    2 cups of chopped onions

    1 cup of chopped celery

     

    Boil onions and celery in 5 cans of Chicken broth


    After cornbread cools, tear in pieces and mix in above mix of broth, onions and celery, then add 1 teaspoon of pepper, 1 teaspoon of poultry seasoning, 1 teaspoon of sage, add 2 or 3 or 4 cans of chicken broth until it is a little soupy, the more soupy it is, the longer it takes to bake

     

    Bake at 350 for 3-5 hours, if top does not get brown, put it under the broiler for a few minutes, but watch out, it doesn’t take long to brown, once it is cooked, turn oven down to 200-250  to keep it warm

    I read over that recipe. It calls for “canned oysters”. Believe this or not but i have never saw oysters in a can. But on that same note, I have never looked for canned oysters either. 
    I believe that I would substitute them with fresh oysters and call it a day. Fresh has to make it better.  

    Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

    1 box stove top turkey, 1 box savory herbs.  Add turkey drippings.  I'm 47 and have tried everything under the sun.  Don't knock it till u try it.  The dude abides.

    @sgh "Canned" oysters are just fresh shucked oysters.

    Never seen that before brother. I have saw “fresh” oysters in the plastic quart jugs. But not in cans.

  • Started messing around with dressing the last several years and this is my go to

    3 boxes of jiffy cornbread-baked to instruction. Let sit uncovered for a couple of days to stale up.

    1 large sweet onion chopped
    couple stalks of celery chopped
    cook in large pot with a healthy dabbing of butter, salt/pepper/garlic powder
    1 package each of jimmy dean Italian and sage sausage-thrown in with veggies and cooked down
    Add 3 cans of Campbell’s French onion soup 
    tear up cornbread and toss into pot, mixing in evenly and transfer to baking dish

    throw on the egg or in the oven for an hour at 350 and enjoy

    3 boxes of wild rice

    Chicken broth, qty. as recommended on the rice box.

    One onion

    Two Stalks Celery

    Dried Morel Mushrooms. 2 or 3 packs should do.

    3-4 strips of Bacon (or more) minced up in small pieces.

    Chopped pecans

    In a stock pot: 

    Fry up the bacon to make bacon bits. The more the merrier. Leave the fat in the pot.

    Add the chicken broth to the bacon and bring to a boil. Add the rice and simmer until done (an hour or so)

    Drain any remaining liquid and use to re-hydrate the Morel mushrooms. Once hydrated, chop into fine pieces. Add the morels and any remaining liquid back to the rice.

    Chop the onion and celery finely and add to the rice.

    Add the pecans to the rice. Stir well to mix everything up.

    Add additional spices to suit  your taste. I usually add some black pepper, salt, thyme, rosemary, and garlic.

    Let cool. Overnight is best.

    Stuff the bird and roast as you normally would.

    Unless you have a huge bird, there will be some extra stuffing. I usually put it in a cake pan, cover with foil, and bake it. It makes a great side dish and as base for turkey hash. Just add minced up leftover turkey and gravy, then reheat like you would a casserole.

    That's exactly how I will be doing mine... Get it all ready today, refrigerate, then pop in the oven first thing in the morning. This is may mamaws world famous dressing. I was very reluctant to even post this recipe... I would consider it if I were you... The only dressing my wife has ever liked...

    Sold!! @Slippy How deep is that before baking? Hard to tell in the video if it's an inch of dressing or 4 inches

    It’s deep.  It’s a huge pan, 15” x 9” x 4” deep. The dressing ends up about 3” deep. Enough to feed 10 people with left overs.

    Use both cornbread and white bread. When you mix with the foul broth, the bread will take a backseat to the cornbread. The bread brings a smoothness as it binds it all together.

    I’d stay away from the bread with my recipe. It’s super smooth as is. Plus my granny would turn over in her grave. Go with another if you want to use bread. #grannyknowsbest

    Mom used to make “dressing” patties outside the bird in addition to the stuffing inside the bird. It seems to me she added an egg or two and a little mayo to the regular stuffing plus a little broth. She’d make burger sized patties and bake them like cookies. Awesome with gravy. 

    Bride of Teefus makes extra stuffing mix and cooks it outside the bird in a cake pan. Sauté your onion and celery first, mix up your stuffing, add extra broth, and bake low and slow for about three hours. It’s pretty good.

    Never tried it, but what if you put the stuffing in a casserole dish and set it under the rack the bird's on? You get drippings, but don't have to worry about one finishing early.

    I hate it when I go to the kitchen for food and all I find are ingredients!
