    You guys are killing it. Making that much sausage is hard work. 
    Yes it is. Grind some meat, add some spices, and stuff some casings. Sounds easy, but it is a lot of work. Total haul was somewhere About 56 lbs. which brings me to.....

    Yep.  I know it can sound cliche, but it was really my grandfathers who was a proper butcher. I remember seeing a cow hanging in his shop and him carving a cut from it. Scraps went in a bin to become sausage.  The thing weighs a lot. I struggle to carry it from the basement. If I had to guess, it is 60-70 lbs.  but I do love using it. The thing can grind meat as as fast as you can get it in the neck. Grinding 50 lbs took no more than 5 minutes. Speaking of the neck, the knife marks was made by either my grandfather, father or uncle. I will post a picture of that later.

    Sure will. Give me a bit a day or so. There is nothing to them.  Simple and reliable to me. I know you have made a ton of sausage. I love it.  The issue is the grinder is big, and as you know, is a lot of work. I would actually like a smaller grinder to make more types in smaller quantities.

    @RedSkip I really have no idea. A meat grinder is a simple machine. It grinds meat. Then you mix with some seasonings, then stuff in a casing. You can stuff from the grinder, or get a dedicated stuffer.  People swear by the stuffer. I never used one. So is one needed?  Your call....

    Start simple. Read reviews for to find a dependable machine.  And get the highest power you can afford. Oh - buy a spare knife and get at least a kidney plate and 1/4 plate. From there, you can experiment and expand. See if you really want to get into this. 

    Recipes: they are all over the web. Pick one and try it. Then switch it up.  Want more garlic? Add it. Want more bite? Add some cayanne. Sensitive to heat? Leave it out.  That is the beauty of it. You pick a recipe and adjust it to be yours.
