Mark @Sea2Ski and I got together for the secound year (same weekend last year)....to make sausage. I traveled up, and this year went much more efficiently based on my improvised expierence. A few pictures to share. We started last night with cutting the meat and doing our rough grind.
This

Breakfast and and then some measuring of spices began.

We
made some Kieilbasa, Onion and Hot Italian sausages. 

Great time had by all. Mark and Valerie are great host.

If you want to try it out without investing much money, you can get your butcher or even grocery store to fresh grind your meat. You can use a pastry bag to stuff the casings. It’s not the most efficient way but you can get away with making 5lbs that way. If you like it then you can buy grinders, stuffers etc.RedSkip said:
