I’ve been tasked with providing pork for my kids school fundraiser tonight. I’m doing about 60 pounds of pork, rubbed with a combo of Ozark Heat and Butt Kickin Chicken, with hickory/cherry. Happy Friday, all!

If you need help shredding the meat, break out the stand mixer. Works with refrigerated meat too. Just pay attention or you can wind up with mush.

When I cook a lot, to be served in this fashion, I like to leave them whole and wrapped and just pull it as I need it. I’ve had so much bad, catered bbq that I’m obsessive about keeping it as fresh as I can. I’d rather it take an extra minute to serve someone, than I would give them cold, dried out pork.
