Thit Heo Nuong Xa – Vietnamese Lemongrass Pork, a Minimax cook

I saw these made by @CPARKTX last year and thought they looked fantastic. It's taken me a year to getting around to making them, and they did not disappoint. Absolutely fantastic, and reminded both myself and SWMBO of the chargrilled pork we'd enjoy from street food vendors in Saigon. Recipe linked below:

Grinding the aromatics with a pestle and mortar:

Pork coated before being covered and placed in the fridge to marinate:

Yeah.. our Lemongrass plant is less than a year old so finding the soft “treasure” was a challenge. Did a lot of chopping and hammering just to get it down to that size. I went a bit stronger on the fish sauce than the 1 tbs from the recipe (probably 2-3 tbs) since I was marinating!I also did not apply any smoke to the butt.Had leftover lemongrass pulled pork and loaded cole slaw for lunch yesterday and had a smile on my face all day!!!Thanks again!!!!Kirkland, TN2 LBGE, 1 MM -
