OT: Ribs on the Roccbox

Decided to try something a little different.  Riffed off a recipe posted online for baby back ribs finished in a Roccbox.  You roast them in a rub for 2.5 hrs.  Sauced and finished in the Roccbox at 900 degrees, five minutes a side.  






Holy Mother of God these were good.  I may never do ribs any other way if these consistently turn out like this.  These may be making an appearance at Butt Blast my friends.

    They look killer. I bet SV in lieu of roasted would be slammin too.

    I don’t know man.  I’m a big proponent of SV ribs, but these were honestly every bit as good if not better.  Plus, they took all of three hours start to finish.  Ribs in THREE hours!

    There’s no cleanup. You put them in a CI pan and then into the RB.  The heat and flame do all of the work.

    The effect here is created by a flame rolling over the ribs in a chamber that’s at 900F.  There may be a way to get to something like that in a BGE but to me it’s not obvious.

  • I just got my Roccbox direct from the manufacturer.  Same price as William Sonoma and Free shipping to the US.  For some reason, the lead time for delivery ordering through William Sonoma was 6-8 weeks to Los Angeles.  I got it in less than a week from Roccbox.

    Wondering if 20-30 minutes in an Instant Pot and then a high heat finish in a Roccbox would be good. Total time 45 minutes +/-.
