Cuban inspired poke chops with mojo. Marinade in 2:1:1 orange juice, lime juice and vinegar for an hour or so. Pan fried to brown with cumin, oregano, salt and pepper, then braised in 1:1:1 orange juice, lime juice and white wine with sautéed onions and garlic. Served with black beans with chicken broth, bay, onion, garlic and cumin and deep fried ripe plantain. Wish the plantain had crisped up more, but still good.

The sweet ones don't really crisp up that well. Green plantains work better. Halve the sweet one and cut it into pieces, then fry in butter and top with some cinnamon.
