    Dude... stupendous!!!

    aloo gobi is comfort food at its finest. A stable in every Punjabi household (my mom was Punjabi, so I’ve had my fair share. 

    And fire roasting veg for bhartha is the only way to do it. Especially your way. 

    I’m loving this in so many ways.

    Holy cow. This looks incredible. We did Indian last night but the cauliflower would have been the perfect side. We did the zucchini and Malai Kebab (chicken, yougurt, masala)

    I can’t imagine NOT fire roasting for bhartha, and I was about to fire up the egg when I took a look at the inferno going in our fireplace.  I was trying to figure out how to do a mini-asado cross in the fireplace for the chicken we roasted, but @20stonespice gave me “the look.”

    ...the cauliflower would have been the perfect side...
    It is definately now in the rotation.

    That’s almost 2 stone.  I am down a bit more than that. “No flour” on our plan is pretty rough, but the pounds are falling off.

    Thanks.  If you don't count making the sausage (or roasting the zucchini in the fireplace), it all came together in under an hour. It helps that we have a well (re)stocked spice cupboard, and that we chop onions pretty fast for civilians.

    XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

    @cali thinks we should tone the masalawurst down, but I am not so sure.  It has a ton of flavor, and could actually be a bit spicier.  I am pleased that we bullied him into making as much as we did.

    I'm an agreeable sort of chap. One of my (many) endearing qualities :smiley:

    If y'all are ok with the level of spice, then that stays .I do think the balance of flavors can be worked on though, and that's important to me. One more shot will do it. We'll revert to the scribbled v1.0 "recipe" and tweak. Slightly.

    I'm glad that it turned out, and glad now that we made a bunch of it.
