Do the ones in the middle cook the same as the ones on the outside? Do they get the same amount of smoke? Do you have to keep flipping them or anything?

They turned out fine. You just have to watch them a bit more. Shuffle them around a bit, checking temps to make sure you keep them all on the same schedule.

No, I had to watch those on the ends and shuffle them around to keep them all on track.
I pulled them when the toothpick test worked. Not at tme or temp.
Some were early, so I wrapped in BP and put them in a cooler. Held for 3 hours, and served steaming.
Do they get the same amount of smoke?
I was using 5 fist sized chunks of peach. I think I got them all to the level I needed for smoke flavor.
Do you have to keep flipping them or anything?
Did not flip, but did shuffle them a couple times. The second time, some began to fall apart.
