    Hahahaha.  There’s one ingredient I don’t have and honestly can’t touch for a variety of reasons, but in my experience the final product is really good without it.

    Hahahaha.  There’s one ingredient I don’t have and honestly can’t touch for a variety of reasons, but in my experience the final product is really good without it.  
    Definitely let those of us who have to pee in a cup to keep our jobs know if you make it true to the original recipe.

    First batch of sour dough pizza balls have been prepped.  Proofing at RT for about 5 hrs now, then into the fridge for a 48 hr cold proof.

    Tell your “friend” they can just sneak into @piney trailer when he drives it to the shelter.  Last year he was cooking a shoulder in it.  He asked me to help him unload it and when he opened up the gate, a plume of smoke went up like I never saw before.  Yep, a large with a shoulder in it cooking away in an enclosed trailer.  :confused:

    I asked a few questions:

    “Its perfectly safe”, he said.
    “nahh, the drippings will not flame up as we offload it”, he said
    “The egg is not that hot”, he said.
    ”yea, it was cooking all night... does that matter? ” he said.  

    :confounded:

    Great times!!!!

    Just finished a test run of shrimp tacos and fish tacos for lunch KayNOcook said they were very good I loved them. Going to repeat Saturday! I have been looking at recipe's and YouTube videos for a week and have pulled from many of them. Hungry Hussey was a big help, Thanks Matt for your video.

    Those pizzas look very dark. The pepperoni almost looks burnt and sort of “nutty”. I would toss them and start over.
