Prime Dino Ribs

Happened upon a package of prime full size short ribs a while back at Costco.

Thawed them out for tonight's dinner. Rub was Meatchurch Holy Cow and The Gospel.

Set up the egg with Fogo and cherry chunks and smoked for about 7 hrs around 300.

First rack finished quicker so finished cooking the mac and cheese on the egg. Aged cheddar, jack and goat cheese with bacon, onions and creme friache.


Turned out great! All the brisket flavor without the time commitment and hassle.

Couple strawberry margaritas to round things out...cheers!!

Great cook and even better money shot. Congrats on the cook. Nailed it. You are right about the brisket on a stick flavor-but the rib cook is so much more predictable

BTW- impressive smoke ring.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Those look incredible! We had choice beef ribs last night and they were the best I've ever had. Can only imagine how good prime are. Well doneLBGE (still waitin' for my free T-Shirt), DIgiQ DX2 (In Blue, cause it's the fastest), Heavy Duty Kick Ash Basket, Mc Farland, WI.
If it wasn't for my BGE I'd have no use for my backyard... -
If you are anywhere near Lexington NC, Conrad-Hinkle keeps these in stock. The butcher guy told me he ordered several times until he got the cut he wanted. On a side not their pimento & cheese is to die for.
Be careful when following the masses. Sometimes the M is silent.
