    I'm sorry I couldn't watch that. I bring it in let it rest for a bit then slice it. I eat that fat layer he scrapped off along with the meat underneath.

    Every time I see that video I wonder how much he has to charge to make a profit.  Maybe too much - his website is gone.  Anyone know if he is still in business?

    That's how I do it except I use a paring knife and use tissue rather than newspaper.

    Every time I see that video, it makes my head hurt. Being on the other side of the table doesn't make you a Pro.
