    @Foghorn - great results and video right there.  Most eggcellent.
    You must really appreciate your employees to sacrifice a point to burnt ends, especially in Texas.  Surprised the Brisket Gods didn't have an intervention  ;)

    @lousubcap, one of my co-conspirators (owner of the offset) wanted to do burnt ends and he did the majority of the slicing, etc. so we originally sacrificed two points to make burnt ends at his urging.  Then the sliced and chopped brisket went so fast I convinced him to chop one of the points and give it to me to serve.  So, we only did burnt ends on one.  The were pretty good but got done after everyone was full.  

    @SciAggie, as I said, the party wasn't at my house, but you are welcome any time.  With that said, I'm guessing that Boudro's took good care of you.

    Thanks @caliking.  Frankly, we did.  It wasn't perfect.  One of the the 5 briskets was slightly undercooked.  One was slightly overcooked (which is not really a problem as most people tend to love brisket that falls apart in their hands and mouth, especially when it is as moist and juicy as this one was).  The other 3 were perfect.  I've never received so much praise for the quality of the food and I've never seen a crowd just devour that much meat that fast.  The pig definitely could have been better.  We injected with apple cider vinegar which we should have cut with apple juice or just used apple juice alone.  But just getting something that tasted pretty darn good out of a lean wild hog was a lot of fun.
