Briskets are wrapped.  3 on the offset, 2 on the Akorn, and a wild pig in the brinkman.  Shooting for everything in FTC by about 2 for a party at 5. Briskets went on at 10 PM last night. Wrapped them about 5 AM. I'll try to get some sliced pics.

You didn't mention your house as a place to eat.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@Foghorn - Great undertaking right there.  The aroma must be driving the neighbors crazy.  Did you have any help over-night feeding the off-set??
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

The overnight work was a team effort with a number of us taking some shifts feeding the offset. It's not my house.  It belongs to a colleague. We are having about 100 for a work picnic to welcome new employees.

I should mention that the pig was rubbed with Mudflap Joe's All Purpose Prairie Dust that was given to me in last year's rub and sauce exchange by @nlovold

Yep. But I can't get my phone to recognize it's existence when I try to attach or embed it.

That's all fine and dandy... but the real question is - WHAT TIME SHOULD I COME OVER?!?!

And I like how you refer to the 'terns as "employees". That's cute.

    Dude we need more pr0n!!!

On a side note,  I remember attending the intern welcome shindig (when my sis started at MUSC back in the day). It was nowhere close to what you are throwing down .

You may not be such a **** after all...

I know, right? He gave me ALL KINDS of advice about where to eat in San Antonio - except there. And I thought we were real forum buddies all this time...

@SciAggie, you didn't say you wanted a place to eat TODAY.

Well all meat was consumed. The precook weight of all the meat was about 110 pounds. The attendance was about 100. I guess the 0.625 precooked pounds per guest rule doesn't apply when with my crowd. We'll remember that going forward.

Here are oics of the pig after we started pulling it. And of some burnt ends we made with one of the points just because we could.
