as a Home Brewer who would capture some of my yeast after fermentation and make a 'starter' for next time, I can say that yeast tends to 'adapt' to YOU and YOUR conditions.
Bigtime brewers do NOT send away to WyeYeast for more, but rather culture yeast for their conditions / style / desires.
Wouldn't surprise me to learn that YOUR yeast has done so, as well. -

Bump!
Baked a loaf after a loooooong while.
Pain au bacon grease (because I ate the bacon). WW 20%, 70%ish hydration. Timeline was kinda squirrelly, so didn’t prove quite right. But, still delicious!
