    I should cook a couple more turkeys being everyone liked the way i made it.  That's the third turkey I've ever cooked and it turned out great. Smoked Turkey enchiladas sound awesome!

    if you take the dark meat off the bird and pull it just like pork shoulder, it doesnt need much spice...the enchilada sauce is the mex food flavor and the smoked bird gives it a wonderful finish.  I am more of a white meat bird lover but ill wolf down dark anytime in a smoke turkey enchilada.   Ive tried this with chicken but the yield is so low in terms of meat that its best to go with turkey so you can make a decent sized batch
