    Just picked Mortimer up from the fab shop a little bit ago. 

    Just enough room to fit the cooler between the propane burners and an open door on the prep table. 

    There is more room between the cooler and the chargrill than I expected, but I am thinking I will have a heat shield (2 vertical sheets of steel with some Roxul sandwiched between) installed once the catering season is over. Don't want to shorten the life of the cooler by making it work harder if I can help it. 

    Plugged the cooler in and it cooled from ambient to 34 degrees in about 30 minutes, very happy with that.

    One more mod I am going to make in the off-season is have a 3/4 height insulated holding oven mounted between the prep table and the cooler. Once I get to an event site, use the pig winch on the backside to lower the oven to the ground, load it back up at the end of the day. 

    The health department was fine with the warmer above the firebox, but adding a dedicated warming oven will give me a humidity controlled space and increase my holding capacity.
