The sun shines on my brisket. And pork fat goodness.

It's been awhile since I've done a packer.  Not enough smoke in my backyard recently.  I told the wife to pick up a packer at costco and she came home with a super floppy 14# prime hunk of beef.  Hopefully this bodes well for a tender brisky.  Gonna run this a little hotter than usual, hopefully it all comes together.  The back yard is full of delicious pecan smoke now, and the sun is shining on it all - this picture cracked me up!  The neighbor's windows are closed so I'm hoping his house doesn't get all smoked out.  He gets kind of pissed about it but what can I do???  Briskets have to smoke right?





Yesterday I put some belly in to cure.  It was the worst belly I've ever bought in terms of sheer amounts of fat with zero meat.  So I figured I'd render out some pork fat.  The chicarones left over were literally like biting into air.  Need to make these little heart-stoppers more often!

    The scent of bbq cooking is the best smell in the world, you'd think neighbors would be grateful.

    Thanks all. Damn the smoke smells good. Slowed down around 160ish but it's making its way through the stall. 175 now. We'll see how this cow behaves, I have high hopes.

    Once again, disappointed that I wasn't invited over! Only a few thousand miles away! 

    I was quite literally sitting down to write my own "lazy Sunday" post, but I'm going to hijack your thread with my own pics, since you got me into this obsession to begin with, you can't really object! While I'm still a newbie, and not as prolific as @tikigriller, I'm getting there...

    First, homemade (leftover) brisket hash for breakfast:



    Then a roasted turkey breast, over apple and pecan wood. My meat guy calls this "turkey London broil", I have no idea what that means, but it's delicious. The breast comes all wrapped up in butcher twine.  Now I have lunch meat for the next week:



    Then I sliced up all the bacon I smoked last week:



    Everything into vacuum sealer bags:



    Finally, it seemed such a waste to not use the beautiful fire I already had going in the egg, so I roasted this kobucha squash that's been sitting on my counter for a few weeks. Gonna mash it up with butter and brown sugar and see what happens:

    @jrwhitee it was a great season for the cubbies.  now i have to suffer through the bears.  hopefully the hawks will keep my spirits up...


    Sliced.  texture and flavor were good, and there was more flat than point on the thick end.  meat quality was so so - not sure why it qualified as prime. 8 adults and we killed an entire brisket tonight.

    I don't know why it bugs me but whenever I do these with the flameboss it gets such a distinct smoke ring.  it looks fake to me for some reason.

    Your take on that smoke ring just shows your BGE bias. It looks legit. It's just bigger than one usually gets with a BGE.

    @foghorn yeah I may be crazy but it seems like the smoke ring is very pronounced when I use a controller. 

    @YukonRon I don't know what that is but I like it! If we could just make it a scratch n sniff it'd be perfect

    @theyolksonyou posted this picture while he was smoking his brisket. He is a great cook, coach, father, friend and husband,  but, bless his best efforts, a lousy photographer. This image will keep me from being the worst photographer in this forum. I am thankful for such things.
