Well yesterday that chicken cook was at 325 and I saw my fire dying down. I was done and instead of letting a good fire go to waste I opened the doors for bit to let the excess heat out then managed to get it down to 170 degrees on the guru with just a few coals still burning. I put a piece of wood on and smoked this jerky for a few hours, I like to finish in the dehydrator.
I started it it on the dehydrator last night but knew I wouldn't stay up. Pulled it into the fridge and started it back up today turned out great. Started with 4 lbs of London broil, hand sliced for the first time left me with thicker pieces than I like but al is good. My kids love this.
one question I saw smoldering wood smoke was not good... But if I'm going low temp how does the wood not smolder? I did play with the fire box a bit as my fire was dying and left the door open for a burst of air to ramp it up a bit. My jerky taste fine just came across that smoldering issue today reading online.

I have a Chubby G2 that I compete with at competition along with a Weber or every now and then an Egg of mine. Backwoods are Solid Versatile Cookers. One of my best purchases ever, no complaints what so ever!
