Mahi Mahi

I'm going to grill some mahi-mahi fillets tonight, any recommendations for the seasoning? I was thinking about using dizzy pig swamp venom. Have used cavenders in the past and liked that too.

Don't know about mahi. I pan seared some salmon a few days ago and my homemade sodium-free lemon pepper was mighty good on that.

I hate it when I go to the kitchen for food and all I find are ingredients!

I had great results, with "skin on" , raised grill, VOO, Kosher Salt, Lawrys, Ground Pepper, Lemon. Grill skin down, a minute or two, flip, grill to coals until done. I think, very similar to Hans61 advice

Blackened or S&P, herbs and butter. Simple...let the fish shine not the seasoning. Skin on or off?  On go direct on the grid. Off I prefer a good CI pan or skillet.

My sear marks weren't as good as the package ha! Went with the swamp venom but added some lemon pepper  - sides were asparagus and sweet potatoe fries all enjoyed!

Sounds good, looks even better! Gotta love lemon pepper.

And your sear marks don't look 'shopped! =)
