My go at Seafood Paella

The college boys came up to the lake for the weekend before their Spring Break. I thought this the perfect group to try out Paella. I'd been intimidated by the dish but now would say it's an easy cook. Did 2 batches, one on the L and one on the XL. After the Paella, I used the fires to cook up @NecessaryIndulgences Chipotle Lime Chicken wings for the to go box. Satisfying cooks!

So with the hot eggs, and wanting to send the boys with some road food…@necessaryindulgences chipotle lime chicken wings sounded legit. So I cooked those off and half of them made it through the night before they left.
They are spectacular. By report of course.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Nice job, there. Paella is a great cook... and hard to be patient enough with the rice.
For those looking to make a paella on an LBGE, All Clad makes a pan that just fits, with vertical handles. Not cheap (at all) but works well.

And here's a link to a 15" paella pan for a LBGE that has vertical handles as above (disclaimer- @Little_Steven pointed me in this direction), works well and won't break the bank.
