So I was going to use the Boudin for the wrap but @SGH suggestion, did not think it would bind very well...So I made some Homemade Italian Sausage, Filled it with the Boudin and some Crab Meat, filled with Cheese and wrapped in Bacon...No plated shots as someone had been drinking that night

With Italian Sausage

Homemade Boudin

Homemade or store bought, boudin is very good off the Egg
Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

@Mickey , I did it in the style of the video below, just cooked the shoulder completely down, never touched the grinder used the seasoned water from the pork to cook my rice in....seasonings were Trinity Slap Yo Ma Ma  Cajun Seasoning at the end fresh green onions and Italian parsley....was pretty easy. I think most people cook, then grind the pork

For both a great job and the use of crabmeat:

Someone had homemade boudin at brisket camp, and it was outstanding off the Egg.
