Because I overdid it.

Defrosted for a week or so then started with S&P for an hour and on to the egg at 275 until IT of 115.

Let it rest for 10 minutes while getting the egg to 800+ for a nice sear

Voila


But while you wait on the cook you should caramelize some onions

and blanch some potatoes at 300F for 5 minutes

Pull the fries and make some Dijonaise with Mayo, Mustard, Garlic, EVOO and salt.

Toast a Brioche bun and get ready to slice.


Start stacking and melt some provolone.  Fry the potatoes at 400 for another few minutes and toss with Garlic, Rosemary and parm.
Gotta get the end piece on there.
Add caramelized onionsand enjoy
