Thx to everybody for all the kind words. Considering these were my first Tri-Tips I was pleased with the outcome. I've only done one tri-tip so far, a couple of weeks ago...Santa Maria from TJ's. Indirect at about 300, just over an hour to about medium. Probably some of the best roast beef i've ever had. Wish we had a TJ's here, but closest is Milwaukee WI. Will be comming back from vacation a couple of weeks from now, through Milwaukee. You know where we will be stopping.
