Scotch Eggs (Breakfast Treat!!)

This cook was not done on the Big Green Egg but I thought it was worthy of a post.  My wife and I love scotch eggs, but have never attempted to cook them until yesterday morning. We had a blast prepping, listening to Bruce Springsteen, and having a few glasses of bubbles to celebrate her 30th birthday.

  • We started with soft boiling the eggs in a pot for 6 minutes with only a half inch of water in the pot (intended to steam and not boil)
  • After 6 minutes transfer to bowl of cold water to stop the carry over cook.
  • Prep the breakfast sausage by adding spring onions, adding parsley, or whatever spices /additives you want to add. Next make a medium sized meatball and flatten so it the sausage will be large enough to cover the egg.
  • Once the egg is incased in sausage dredge in flour, dip in egg wash, and then coat with Panko or Bread Crumbs.
  • On the stove prep a large pot of oil at 350 degrees
  • Place the eggs in the oil and cook for 5 minutes and remove.

This was our first attempt and I have to say I would not do anything different.  The recipe is fool proof and we nailed it.  A few helpful hints ( 1) Soft boil more eggs than you think you will need, we went through quite a few when peeling because we broke the egg 2) Place the meatball between two pieces of plastic wrap and then flatten.  This keeps your hands clean and also makes for a very clean and neat work area. 2) Wet your finger tips to help spread the meat over the egg )

Looks great, I just egged a batch for my wife's moms group Friday morning before work.

They had some left over, just had one for breakfast this morning.

I still haven't tried frying them, based on your pictures there, my next batch will be fried.

@DMWThat sounds great, how did you egg them?  I am very interested...did they come out crispy?

Indirect, around 350* - 400*. I did not bread them, just sausage wrapped, and I use hard boiled eggs. After wrapping I gave them a coating of Dizzy Pig Pineapple Head rub. They don't get crispy like fried ones, but are still good.

  • @DMW looks great.  Thank you!
  • That looks fantastic.  Or as we say in Texas, "That looks fantastic."

I love Scotch Eggs and thought they would go over well at the Salado Eggfest a few years back.  Yes, the Eggfest where a bunch of us wore our kilts.  Both the Scotch Egg and the Kilt clad Scotsmen went over great.  Now you've got me wanting to don me kilt and cook me a Scotch Egg.

That plate is fabulous. We love scotch eggs, but haven't made them in awhile. Thanks for the reminder. I keep at least one deep fryer on the counter at all times and will fire up a batch of these treats this week. Happy birthday to your wife. A very nice way to start the day.

Thanks for posting this thread link. Officially bookmarked as yet something else I want to cook!  At least for once, I already have the deep fryer so I don't have to buy another toy!!!  Having a hard time figuring out if that is a good thing or bad thing though. Ha!
Just bought an Egg?  Here is what you get to look forward to now:

With this method, do you boil/steam with the lid on the pot?

@WAHOO_EGGER_CVILLE - Beautiful plating! Those look fantastic. I've eaten them in a restaurant but I've never made the "traditional" Scotch eggs. I have made the bbq version for a couple of football tailgates and they were a huge hit. Have also done them for Mother's Day.

If you're interested, here's how I do them on the egg. Not even sure where this method came from but my brother did them once and I adopted.

Hard boiled. wrap in sausage, then bacon (thin sliced works best). Dust with BBQ rub. Chill overnight. Smoke at 275 for about an hour and a half. Apply a little direct heat if necessary to crisp the bacon. Serve on toast with a drizzle of real maple syrup.

    L x2, M, S, Mini and a Blackstone 36. She says I have enough now....

Sounds awesome, this is what I am thinking of doing, maybe this weekend.

Can you get Cumberland Sausage with black pudding in the USA? I've tried many different scotch eggs, that specific meat makes the best ones we have tasted. Also I double dip 'n' roll the encased egg in battered egg and panko for that extra crunch.

The sauce a Tamarind and Date dipping sauce. It is the personal recipe of a chef friend who was kind enough to share it with me, absolutely outstanding with the scotch eggs.

These look really good, I am very interested in the Cumberland sausage.  If you have place where this can be ordered I would love to give this a try.

i think you would have to go to london =)   my local butcher is an english butcher making the scotch eggs, pies, etc, and makes a sausage similar to a cumberland but no blood pudding,  it doesnt freeze well so i would not get it shipped. closest we would have here is breakfast sausage heavier with sage

    What @fishlessman said. :)

Having said that I did a Google search for "Cumberland Sausage USA" and it returned a few vendors, inc. one in NYC. Maybe that's something you could try @WAHOO_EGGER_CVILLE

Incidentally, for a dare I went one step further and made aa English Breakfast Scotch Egg, complete with mushroom and bacon. They were outstanding.

    Recipe is here:
