Prime Brisket done today

Started with a 11.48 pound Prime Brisket from Costco. Added my own rub. Put it on the XLBGE about 11:30 pm last night.
Yep, I'm a girl and it's my XLBGE not his.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Thanks everyone! I started with a nice Prime Brisket from Costco. My rub has a variety of seasoning. Chili powder, white pepper, paprika, garlic powder, onion powder, black pepper, a little salt, brown sugar , cumin, coriander and a small amount of cayenne. Husband and Mom said no sauce was needed. That's always a compliment in my opinion.Yep, I'm a girl and it's my XLBGE not his.

I carved a little fat off but not much. I put it on at 11:30 pm, egg stayed at about 250 all night. Took it off at 11:30ish. Let it rest about 30 minutes. Hubby was eating before heading out to work so I couldn't let it rest longer. Had a chunk of hickory and some mesquite chips.Yep, I'm a girl and it's my XLBGE not his.
