Foil!!!

Do I really need to wrap my brisket in foil while it finishes smoke in the BGE? I've done several without and have all turned out fine, but I see a lot of people using foil and wondered if it makes a better brisket. 
Smoke 'em if you got 'em!!!

    No, you do not. To be brutally honest, if you do your part you don't have to wrap it at all. Wrapping is a aid to control smoke profile  and texture. Nothing more. This can be done without wrapping if you keep a good eye on what is going on and maintain a clean fire. I usually wrap just because it gives me a break from constant monitoring, but it's not a must. It's simply a means to reach a desired end. Nothing more.

    Wrapping is also to add moisture to the food. Totally unnecessary for the BGE, I smoked a briskit for nine hours, and it came out perfect. No foil was used.

    I have foiled to hurry it along, Texas Crutch, but the best bark and texture are with a clean fire as SGH says. Now to hold a brisket, which I do not like to do, I have FTC'd it like a butt, the bark is not the best this way, although SWMBO likes it better....go figure.
