I found this on a sub link on another forum that I visit. With all the talk of Hatchs as of late, just thought that I would share the link. Has a lot of good info and recipes. Also you can order the peppers from the sight as well.

    Believe this or not, I have never tried them. But I'm about to. Got to see if they are as good as everyone says.

    They are a mild/nice heat and are the sh-t on cheese burgers. If you have a good salsa recipe use these in place of what ever you are using. Spend some time with them and knowing you from your posts will make something special.

    Scotty I have not tried them either but with all the talk and links I think I'm right there with on ordering some in. They sure don't give them away but if there quality I do not mind the cost. Some green chile is in order i think.

    This^^^^^^ sounds great. Seeing how I love jalapeños on cheese burgers, this should fill the bill nicely.

    Agree^^^^^^. Brother Husker and brother Magic say that they are spectacular. That's endorsement enough for me. I'm trying them if I have to order then.

    They are good enough to spend some time with, they are my favorite, I prefer taste over heat although I can take lot's of heat, hatch peppers just plain taste great.

    They are good enough to spend some time with, they are my favorite, I prefer taste over heat although I can take lot's of heat, hatch peppers just plain taste great. 
    I prefer taste over heat as well. They must be the bomb, they come highly endorsed by several of yall. Can't wait to try them myself.

    I'm ignorant about chile, but given the fact that Hatch designates a region and not a brand, doesn't it stand to reason that there is variation among producers/growers?

    @SGH the climate and soil in MX, NM and CA is perfect. Nola and FL not so much. I found a produce plant I do service work for would order me some at wholesaling pricepoint so I'll be snagging a bushel tomorrow and probably more if they can get the variety I'm looking for.

    Hatch chiles are just as addicting as this egg business so be careful. I used to search them out or order as needed but have since started growing my own. The climate and soil here in Utah seem to be ideal as I've had zero problems as a non gardener. Well, other than perhaps planting to many. Last season we harvested just over 2000 of these tasty things. Being a brand new egg owner I threw a few on to see if I could enhance the flavor. Jury is still out on that one but I'll be sure to report back.

    Love the Hatch Chili Peppers.

    They serve them at Chuy's restaurants which might just be the best Mexican chain in the USA.  They opened a couple in Orlando and one in Gainesville.

    FYI my local Fresh Market is preordering the Hatch chilis $35 for 25 lbs

  • I picked up a mini chili roaster at an HEB grocery store to roast some hatch chilies, it fits nicely on my XL.  I built a concentrated fire with mostly wood chunks, the taller & hotter the fire the better.  Worked pretty good as long as you kept your fire pretty hot.

    That's nifty! It's going to need a really long handle to keep your hand out of the heat though. I had trouble with the heat just roasting on the grate last night.

    Yes, it is plenty durable.  We got it at the Burleson HEB, they were actually located near the produce section at what looked like their fresh juice station.  The employees there didn't know where they were and we finally stumbled upon them.
