How is temp regulation? Any negatives? I've always been a big gas fan for cooktops but interested in a change of its worth it. How about cleaning the surface?

For me the problem is that anodized AL pans will not work. I didn't feel like replacing all my cookware, so I went with gas when remodelling the kitchen.

In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’  Dare to think for yourself.

Temp regulation was our biggest concern- it's way better than with gas. it cleans up like a solid surface counter top. It does not get hot like the ceramic top stoves so it's much easier to clean. We were all in on gas before we were forced in to the induction. so glad we were.

@Wolfpack Our primary cooktop in the kitchen is gas, this just provides an additional "burner".
@jtcBoynton thankfully we have a number of cast iron pieces

we bought 3 under $30 T-Fal pans as recommended by cooks illustrated at Target. They are fantastic. We also use all our cast iron with butcher paper underneath to keep it from scratching the surface. we griddled burgers tonight on a cast iron griddle with paper laid over the stove and under the griddle. Pretty cool.

That's my favorite part of my portable induction top. The ability to line it with paper towel for frying and make no mess. Also no risk of fire without an open flame. (not to mention I can fry on the porch and that makes my house not smell like McDonalds.

My new induction cooktop was installed last week Haven't really used it much since the kitchen isn't finished and still looking at more pots. The times I have used it I was pleased, can't wait to be back to a fully functional kitchen.

I had one, and loved it. When we redo the kitchen, we will have that again. That is a Blood Oath.

Have had a Kenmore for 10 years. It is great, only complaint is it shuts down if any quid gets on the controls, like condensation from a pot lid while checking something. Just have to wipe it off & power it back up

@Bustersdad   I just got one of those at an estate sale for $5!  I am completely blown away by the thing.  The temp control is so good, I've been using it sous vide style - heating up foodsavered leftovers. I'm blown away at how fast it heats up a heavy cast iron skillet.
