Will the island server as your prep area or are you right off your kitchen?Thanks everyone, yes my kitchen is right off the backyard so most prep will take place inside....I found a restaurant supply place online that sells supplies for about 1/4 of what the online pizza oven places sell things for so I splurged for lots of pizza peels and other goodies. One of my favs are 3 of those plastic things you see in bars that hold the cherries, limes and things....I will put ice below the containers and then fill them up with pizza toppings and let everyone pick their own right before I toss it in the oven...I "just" finished making my sauce and 17 pizza crusts, letting them all rest in the frig till tomorrow to enhance the flavor....been doing lots of online studying about pizzas and ovens which is why I haven't had as much time studying up on how to use my BGE but I am sure my previous smoking experience will get me thru the pork butt cook....putting 2 on tonight around 10....oh and yes I will roll, toss and prep each pizza on the granite island though I may have to save some room when my bar stools get filled up with hungry drunks! LOL

Thanks everyone, I am stoked its done.....just put my 2 butts on the BGE...pics to follow.....BYS1981...the island was made by NorCalGrills out of Sacramento. The grill is a 30 inch Cal Flame P4, the wood fired oven is made by Belforno Wood Fired Ovens and was assembled, insulated, mortared and stucco'ed by NorCalGrills.
