BBQ from across the pond - Pork Belly Rib Slices

Hey everyone, and warm greetings from Northamptonshire, England.

I cooked Pork Belly rib slices last night. Smoked for 5 hours, then reverse seared with BBQ sauce baste. See what you think. Any tips or tricks greatly received.

Served with cauliflower rice, a simple chopped salad and homemade Caesar dressing. They were without doubt one of the best tasting things I have ever cooked. I'm growing to love the Egg more and more each time I use it!!


Going to be smoking 3kg of Ox cheeks on Sunday. Will let you know how I get on!

    I've never seen pork belly rib slices either, but they look great and now I want to try them. And the ox cheeks.

    That looks like candy - outstanding, never heard of that cut before.

  • @Griffin Put the florets from a whole cauliflower in a food processor and blitz until rice/cous cous sized. Stir fry it in a little oil, until it starts to soften, this doesn't take too long at all. When it's really hot, stir in a whisked up egg until it's distributed all the way through keeping it on a high heat to set the egg. Then stir in whatever you fancy, I like diced carrot, peas and sweetcorn, all precooked. Then to finish stir through some sesame oil and some light soy sauce to taste. Shouldn't need any more seasoning, but that's entirely up to you. It's a really healthy alternative to fried rice. Enjoy!

    You guys like your bacon over there. My wife and I drove from Aberdeen Scotland to Leeds England a few months ago. During the trip south we stopped at The Horn Milk Bar and ordered the bacon roll. The sandwich was massive! I wouldn't even want to count how much bacon was between the buns. We were also told that HP brown sauce was accustom to the bacon roll. Lots of HP sauce available over there.  It reminded me of Heinz 57 that's available over here for sauce. Your pork belly ribs look fantastic! I should have stopped at your house for dinner! ;)

    I've never seen that cut before.  Unfortunately There aren't any great butcher shops close to me or I'd be trying this tomorrow. I'm really interested in the Ox cheek cook on Sunday.  Great looking cook!

    Now that is my kinda food! Sounds like you know what you are doing. I have never seen pork belly ribs like that either. Beautiful job though. Love that you are getting some ox cheek as well...very jealous! :)

    I have some lamb belly, lamb liver and beef tongue on it's way and I am trying to think of different ways to potentially do some of it on the egg. Smoke is a beautiful thing!

    I experienced pork belly sandwiches prepared on a BGE at the Taste of London in 2012. Very good I might add!

    Thats interesting you guys have HP brown sauce in Canada. Our friends in England love it. They even sent us home with a couple bottles of it! @blasting

    I can't personally confirm that. But, Alex Trebek is from Canada!
    The Google Machine comes up with them being invented by the Tayto Brand out of Northern Ireland in the 50's. Hmmm...

    Cheese in a can. Very similar to the diary topping (i.e., whipped cream) that comes in a can.
